You can use what ever size chimney you want, you will need to put a damper in it to control your air flow.
I question if you even need a chimney? I was having trouble getting my burners to work and a friend told me I wasn't getting enough air so we put a 3 inch brick under each corner and raised the cooker so the air would come in from the bottom. It still didn't work until I completely closed the damper. Now it heats up real good.

Tracey,
Go to http://www.vpstack.com/ & select Literature. There are a
couple of pdfs on chimney sizing. They also will do the calculations
for you if you wish (once you get the system parameters fixed).
Best wishes.
