Try keeping the stalks as damp as possible until grinding.  They will
soak up a little water.  Of course, this assumes you'll be grinding
soon...I've never tried holding cut cane longer than 3 wks.

Grind away.  It will make good syrup.  You will not get as much juice or
syrup as you would have but it will be good.
