David,
I have actually milled cane that had been cut for 3 weeks and already had a
slight sour taste to it and it made very good syrup. I just thought I would
try it rather than wasting the cane and I was glad I did. Yield was low but
it was better than no syrup at all. It seems to dry out from the ends. I
say go for it.
Your offer to use you gear cover is commendable. I wish it was a 27 rather
than a 36.

To answer your question as to the variety of canes I grow the answer is I
don't know! All of my starter canes were given to me by folks that did not
know what they had. I have tried to compare them to web pictures but I am
not positive as to the type. I think I have only two types for sure. One
is a green cane that grows fairly tall if taken care of properly. I have
had usable cane, after topping, that was 10' tall and two inches at the
base. This cane does have some lighter coloring in areas and also some
areas that are dark gray or black looking. The other variety is what we
call the old blue or purple cane. It is a very good chewing cane and
although it will get very large in diameter it does not get as tall as our
green variety. In fact some of it was so large I was reluctant to put it
through my Golden's #27 mill. Some stalks were well over 2" in dia. and had
7' to 8' of usable length. It is a soft and very juicy cane and the #27
handled it with no problems.
I need to get one of you fellows that knows cane to tell me what I have!
