Good points made by all!  I don't focus on one way or the other, but
with no scientific study behind it, and very little research, it has
seemed to me that initial filtering AFTER preheating does seem to make a
cleaner syrup.  

The way I've done it is to light the fire when my boiler is ~80% full
(still grinding), however, I begin with the previous batch's 25gal
propane tank, which only has about 5-7 gals left in it.  This won't
produce enough propane pressure to boil my 100gal tank, but it does get
the temperaure to SLOWLY rise for the first hour or so.  Then once it
gets to 135-165 degrees, I swap out propane tanks for a new one.  This
causes the temp to shoot up to around 200degrees, where I hold it just
long enough to perform my first skimming.  

For some reason, it takes longer for the initial 'scum' to rise to the
surface if I start with a full propane tank from the beginning...no clue
why.  Either way, my process is the same - skim at 200-205degrees and
only after I complete the skimming process do I let it begin boiling.
Allowing the juice to sit for 1-6 hrs prior to heating also seems to
help some, but again, I have no idea why or even if this is something
that could be measured.

We do not preheat ours, only because my uncle says our grandparents did
not
do it. I know of one family in south La that uses a big stainless vat
with
copper coils that circulate water from a water heater. They heat it to
150
degrees overnight then filter it out of the vat into the pan. They claim
it
makes clearer syrup.
