Jim,
We do not preheat ours, only because my uncle says our grandparents did not
do it. I know of one family in south La that uses a big stainless vat with
copper coils that circulate water from a water heater. They heat it to 150
degrees overnight then filter it out of the vat into the pan. They claim it
makes clearer syrup.
