Before I cook the first round each year, I clean my kettle this way; I fill it with water and heat it to around 130-140, dump in 1 gal muriatic acid, let it set 30 mins or so, watch the crud come off the kettle, anything that you did not clean from the juice last year and any burnt syrup etc. Empty this and put 1/2 kettle water with some baking soda to neutalize the acid. Empty this and flush kettle with clean water. empty this and quickly dry kettle and wipe down with coating of syrup. As you have etched the kettle to bare metal it will rust QUICKLY.

Never heard of that...we have cooked on cat iron kettles for 30 years ourselves and never seen that.

has anyone heard of a syrup kettle being the reason for dirty looking syrup? We have made syrup for the last 4 years and even when we make xtra sure that it is cleaned very well through wiping process, after the syrup cools and sets for several days, stringy-like substance is found in the syrup. We had a person tell us it is the kettle and if we change out our kettle it will solve the problem. Any comments or suggestions will be appreciated.
thanks and have a blessed day!
