Tommy,
      I agree with Bill. That's the first thing that popped into my mind : soured juice from cane that likely was frost-bit. It only takes a few stalks to mess up a batch of syrup. Red rot can also cause sour juice.

  has anyone heard of a syrup kettle being the reason for dirty looking syrup? We have made syrup for the last 4 years and even when we make xtra sure that it is cleaned very well through wiping process, after the syrup cools and sets for several days, stringy-like substance is found in the syrup. We had a person tell us it is the kettle and if we change out our kettle it will solve the problem. Any comments or suggestions will be appreciated.
