J T,
Now let me "muddy the water"....How much torque is required to crush, say
4 stalks of cane ?

You need to divide by the radius in feet, ie 3" = 0.25ft. 2500ft lb of
torque on the mill shaft with a 6" dia. sprocket would be 2500 ft lb divided by
0.25 ft = 10,000 lbs of force on the chain.
