[Syrupmakers] enzyme sources

I have also heard that invertase(not sure about amylase) can be purchased at drug stores. The price might be higher, I don't know.

If you grow sorghum, the enzyme you might want is amylase (to reduce the starch content as starch causes gelling as in gravy).   It can be purchased from Dr. Bitzer (as for the seeds, below).  Dr. Bitzer buys in bulk from  http://www.bio-cat.com/products.php?sortby=type&type_id=8

Dr. Bitzer also buys invertase and distributes it for sugar-cane growers, but he does not always have it in stock.  Invertase can be purchased from candy-making concerns, too, as it is used to prevent grittiness or to liquify sugar.
