I have had this occur in my patch of cane in the past and it will more than likely happen again. It has usually happened after a rain or extreme wet conditions.
I grind it with the rest of the cane and it has never had any effect on my syrup.

I called the Houma USDA on this subject earlier today. I couldn’t reach my normal contact, but the person I spoke to said he’d only seen above ground sprouting when the stalk had been stressed, typically by ‘getting a whiff’ of Round-up or from strong winds knocking it over…basically, anything that stunts the normal growth of the stalk can cause this to occur. He wasn’t aware of any viruses as a root cause, however.
If anyone has any detailed information on possible virus causes, please let me know and I’ll track it down.

I posted what little I knew for J T a few days ago. I would ask one on the LA sugarcane experts what they think. Ask Tracy Baudoin who to contact at LSU or Houma to ask.

I have another question though. Can I remove the sprout and then squeeze the cane this fall?

I think I noticed an earlier post about sugar cane eyes sprouting above ground off the stalk and this being a virus. I noticed today that some of my stalks have eyes sprouting out about midstalk. Is this what was mentioned and is this not edible cane? What harm does this do if it is a virus? Does this stalk need to be destroyed or roots and all adjacent stalks too?
