[Syrupmakers] stripping sorghum

We use corn knives for stripping---we have the "newbies" turn it over to use
the unsharpened side so there is less chance of cutting into the stalk
itself. Then when they get "experienced"  we have them turn it over to use
the sharpened side of the blade.
