[Syrupmakers] SyrupMakers in Western NC?

Good Day!
I'm  newly signed up to this list and have been reading the archives.  I 
live in Western NC, specifically Boone (North Western Mountains) and 
Forest City (southern foothills).  I have a nice looking patch of 
sorghum that has headed and some of the heads are forming seeds 
already.  I am hoping there will be a member of this forum who is from 
either of these two areas who would be willing to squeeze and cook my 
syrup and teach me how it's done.  I only have about 1/4 of an acre so I 
don't think that will amount to that much but since I've never done this 
before my guesses aren't worth much.  I can strip, de-head, cut and 
deliver to just about anywhere in Western NC.

Anyway, if there is anyone out there who would be willing, please let me
