[Syrupmakers] sorghum making

Kevin:     Does the kettle that you use for cooking make the sorghum darker? 
  I have always heard that cast-iron kettles makes sorghum much darker.  I 
use a s/s batch pan and have regular evaporator pan that we don"t use 
because we only make 3 or 4 batches.      Thanks  Clayton (sorghum)
