When we started making syrup several years ago we had
the same problem  with foam. Our jar would be about
half full of syrup then it would foam up and run over.
We finally learned if we cooled it a little and not
let to much syrup get in our bottling tank it didn't
foam. We cook on a continuous evaporator and as the
syrup comes out of the pan, it runs down a 5 foot
copper trough before going into bottling tank. Hope
