Tracy, you mentioned selling your syrup. Do you mean you sell it as batches
or could we buy some? If so, I would be interested to see what varieties you
may have syrup from.
Sounds like a great time at your place for sure! After my drive from
Louisiana over the Thanksgiving holidays, I want not part of a long trip for
awhile. I-20 was just terrible. At one point I counted 38 cars bumper to
bumper in front of me.

Hope everyone's having (almost) as much fun as I am!;-)
I boiled 2 batches last weekend, got one batch of juice from USDA last night
and boiled it last night/this morning. I had also cut 2 more batches of
cane this week, and we began grinding/cooking one of those right after
finishing the USDA batch. Now, I have a bunch of folks coming in tomorrow
for my last batch of the week.two guys are driving in from Lafayette and
will be playing the fiddle and.get this..Irish bagpipes..to CAJUN music!
This should be a VERY interesting weekend. Anyone close enough that wants
to drive in is more than welcomed!
This is the first year I've had enough of the 'historic' varieties to make
syrup with them (15-21 Baume' juice at this time).they are all coming out
with a stronger flavor and darker color than the commercial varieties
commonly used for sugar (as expected) (19-23 Baume'). The flavors are all
similar to me, just more concentrated. If everything goes as expected, I'll
have made 16-20 batches this year, and it's selling almost as fast as I can
bottle it!
A new record for me.5 X 100gal batches of juice in 7 days.time for a nap;-)
