Sure, you could use a thinner gauge SS, but then you'd have to reinforce to top of the pan to minimize warping. Also, I clean and dry my pan after each use by washing, then turning on the burner for a few minutes under the empty pan...This causes the bottom to warp rather drastically until cooled.
Also, I keep thinking about the old cast iron kettles...they were VERY thick ( ½" to ¾" ), so I figured a slightly thicker gauge SS might also help to avoid hot spots.
So, what I'm saying is...you can absolutely use a thinner gauge, assuming you beef up the supports and watch your batch a little closer.

That sounds about right....I got my 11ga. SS for about $225 (at cost) about 5 years ago. Since then, all metal prices have begun to sky-rocket.

I priced a sheet of SS today and might have passed out if I had taken it seriously ! A 4' x 10' sheet of 12 gauge was $345, I think. Keeps going up...... I MAY keep the vat for juice storage !
