In the Maple industry we use 20ga for the walls, 20,22, sometimes 24 Ga. SS.
I believe CU might be thicker.

I priced a sheet of SS today and might have passed out if I had taken it seriously ! A 4' x 10' sheet of 12 gauge was $345, I think. Keeps going up...... I MAY keep the vat for juice storage !
