[Syrupmakers] Copper and SS sheet metal for evaporator pan

  Tracy, 
  I'm wondering if a thinner gauge of sheet metal would be better/more acceptable to construct an evaporator pan with ?  Maybe a little cheaper,too.

  I priced a sheet of SS today and might have passed out if I had taken it seriously ! A 4' x 10' sheet of 12 gauge was $345, I think. Keeps going up...... I MAY keep the vat for juice storage !
