I'm a little late to this thread, but this is what we use.  Evidently  some 
use the brix hydrometer.
We measure ours hot and as we like thick syrup, take it off at 36.   Buy more 
than one.  You have to handle the instrument while it's sticky  with syrup 
and I've proved that breaking one is easy to do.
