OK, I've seen something new already. What does your term fleece on the syrup refer to? Never heard it called that before. You most diffenitely do the reading quick with the syrup hot. I have heard of folks using anywhere from 34 -37. Some like their syrup thicker than others. I fill the hyrometer cup once or so to get it warmed up from the hot syrup.

Tell them that you need a hydrometer for syrup. we cook to about 34 approximately....I still look at the fleece on the syrup.

The information I need is what scale do I buy and how to use it. Do you have to cool the syrup before getting a reading or what? What reading to take up?
