[Syrupmakers] Making Density Measurements

Hi,

You'll probably get  good many responses to this one!  I think 35 
degrees Baume with boiling syrup is about right.  When the boiling 
temperature gets to about 222 F, I start watching it closely (syrup 
becomes darker, bubbles like grits, and often "falls" in the 
kettle).  I scoop out maybe a quart into a SS tube and put it on a 
level table top and measure the density.  It'll start off at about 32 
and when it hits 35, I go for it.  Maybe by the time I get it all out 
of the kettle, it is a little more, but, as mentioned, it works for 
me.  The density gets higher when the syrup cools, so you need to be 
quick with your measurements if they are to be useful  I put a couple 
of images in a folder for you.  (Note that when I make the actual 
measurement, it is done with my eye level with the reading.)
