[Syrupmakers] Syrup with Honey ?

 I for one have not heard anyone using honey. I did catch a cooking in Grant,La this past weekend and they use a lemon or two thrown in during the cook. Guess this is the  "natural" way to add citric acid?

      Has anyone tried mixing a little honey with syrup to prevent crystalization of the syrup ? It would seem like a possiblity to me. (I don't particularly like corn syrup for preventing crystalization because I'm not a corn syrup fan--and some folks are even allergic to corn syrup, I hear)
       I remember 1 syrup company used to blend syrup and honey in their product. Now if you used a strong flavored honey like tupelo, you might run the risk of messing with the taste of the syrup too much. But how about clover honey ? What proportion would you need to use to accomplish this purpose ?
