[Syrupmakers] Syrup with Honey ?

I had to toss my hat into this ring.

IMHO, tupelo is the mildest of honeys (last 
entry:  http://www.honey.com/consumers/honeyinfo/varietals.asp). 
That's most the surplus that I make.  Actually, I don't mind a little 
more flavor although I don't want to go as far as buckwheat on most 
days.  Tupelo honey brings about twice what other honey brings, so 
one can pay for tupelo, but not get tupelo.  Over in your area of the 
world, there's a good bit of spring titi 
(http://www.southernmatters.com/Bee_Plant/htm/Spring_titi.php) and 
although I like it, about half the people I've had taste it complain 
that it is sour.  People who like it say it is better as a baking 
honey.  Since spring titi bloom overlaps with tupelo, I bet that 
you've had titi mixed in with the tupelo.  (I'm not superstitious 
about much, but I "believe" that titi honey is pretty good for the 
throat; I have some of Dave Schuler's (Bristol) on my desk and take a 
teaspoon from time to time.)

I'm afraid that I can't tell you exactly what proportion would be 
best, but my starting point would be 15% tupelo honey (which is a 
high fructose honey) to 35 Baume (hot) syrup and I guess you'd be ok.
